Swiss Quinoa salad
about the recipe
A bowl of full of color and freshness!
For 4 persons, this recipe contains:
250 gr quinoa
1/2 cucumber
10 cherry tomatoes
1 lemon
1 bunch of parsley
In addition, what you will need:
4 tbsp. olive oil
1 tsp. salt
Preparation:
- Rinse the quinoa under the tap of fresh water before cooking it in salted water for about 15 minutes. Once cooked, drain and cool in a colander.
- While the quinoa is cooking, rinse the tomatoes and quarter them.
- Peel the cucumber and cut it into small cubes.
- Chop the parsley and place it in a small bowl. Add the oil, lemon juice and salt and whisk to create a lemongrass.
- Combine the cooked quinoa, vegetables and lemon grass in a bowl and serve chilled.
It’s ready !
MagicTip: turn this salad into an "oriental tabbouleh" by simply replacing the parsley with cilantro, mint, or both!

A "sweet and savour" Buddha Bowl
For 4 people this recipe contains :
250g chickpeas, soaked the day before in cold water
150g quinoa
200g cucumber
200g lettuce, washed
1-2 carrots
4 tbsp lemon juice
6 tbsp fresh coriander
3-4 tbsp soy sauce
In addition, you will need :
4 tbsp. olive oil
Salt
Pepper
1 pinch of chilli flakes (optional)
A pressure cooker
A bowl
Preparation :
1. First, cook the chickpeas for 15 minutes in a pressure cooker.
2. Drain them in a colander and let them cool.
3. Prepare the ingredients: cook the quinoa, cut the cucumber into thin strips, chop the coriander, grate carrots.
4. Then prepare the seasoning in a large bowl: mix the olive oil, lemon juice and soy sauce.
5. Then assemble the ingredients in the bowl: warm chickpeas and quinoa, cucumber, salad and carrot. Mix thoroughly and sprinkle with coriander. Season to taste with chilli flakes.
It's ready!
